CARAWAY SEEDS a.k.a. Fennel or Cumin
The caraway plant's fruit, usually misnamed the seed, is a common, pungent herb.










CARDAMOM
Seed pods in the ginger family.  Green cardamom is used in sweet recipes.  Black cardamom is often used in garam masala.











CORIANDER ROOTS
The root of the Chinese parsley or cilantro plant.  They used in many Thai dishes.

The seeds of the Chinese parsley or cilantro plant.  They are used in many Thai curry paste recipes.











GARAM MASALA
A blend of spices used in Indian dishes.  Usually consists of black & white peppercorns, cloves, cinnamon, black & white cumin seeds, and black, brown, and green cardamom pods.












KAPI a.k.a. Thai Shrimp Paste
A fermented paste or powder made with ground shrimp and salt.  Used to make curry and chili paste.










KHA a.k.a. Galangal
Similar to ginger root, used in Thai curry and soup recipes.










LEMONGRASS
A pungent herb used in many Thai dishes.










MAKRUT a.k.a. Kaffir Lime
A citrus fruit native to Southeast Asia.











NAMPLA a.k.a. Fish Sauce
An extremely strong tasting, aromatic sauce made of fish and other seafood, used in many Thai dishes.












TURMERIC
A rhizome from the ginger root family used in powder form in many Indian curries.
